Machines can be fast. Care cannot. Every small batch is pressed, tasted, frozen and slowly dried by hands that know the difference.

Pressing is the middle of the story, never the end of it. What leaves our hands is a jar of fine green powder, weighed by the gram and sealed the same day.

Why We Freeze-Dry

Heat takes. Cold keeps.

Heat is the fastest way to dry a green thing, and the surest way to spend it. So we do the opposite: the fresh-pressed juice is frozen solid, then held under vacuum until the ice lifts away as vapor. Nothing boils. Nothing browns.
